The Founder’s Story

More than one title.
One distinct point of view.

Lin Smith Jerome is a Las Vegas–based entrepreneur, operator and brand builder whose work lives at the intersection of vision, design and execution.

The story behind the work

With a background in law and a natural instinct for creating memorable experiences, Lin co-founded Refined Restaurant Group and helped shape a distinctive portfolio of hospitality brands, including Café Lola, Saint Honoré Doughnuts & Beignets and 3 Little Chicks. Her influence has extended across every dimension of the work—from concept development, design and creative direction to brand storytelling, guest experience, operations and growth.

Lin’s hallmark is her ability to see the complete world around an idea. She understands that the most compelling brands are not defined by a logo or a product alone, but by how every detail makes people feel. That combination of creative instinct and operational discipline has guided her work from the earliest concept through full expression.

Today, Lin’s focus is widening beyond hospitality. Alongside her husband, Steve, she co-founded Gallop, a real-world learning platform inspired by their daughter, Margaux. Created from their experience as entrepreneurs and parents, Gallop helps children strengthen critical thinking through entrepreneurship, investing, decision-making and practical application—skills Lin and Steve believe will prepare the next generation for a rapidly changing world.

Family remains central to Lin’s life and her work. Many of her most meaningful ideas have begun with the people closest to her, including 3 Little Chicks, which was inspired by the founders’ three daughters, and Gallop, which began at the Jerome family’s kitchen table.

Rather than defining herself by a single industry or title, Lin follows a consistent point of view: see what others overlook, carry an idea through every detail and create work that is both meaningful and enduring.

The life at the heart of the work

Built together.
Inspired by family.

For more than two decades, Lin and Steve have built a life and a body of work side by side. Their partnership has moved across hospitality, entrepreneurship and now education, shaped by complementary strengths and a shared belief that meaningful ideas should serve the people they love.

Becoming Margaux’s mother gave Lin’s ambition a deeper sense of purpose. Margaux is the inspiration behind Gallop and a daily reminder that family and meaningful work can strengthen one another. What began at their kitchen table is now helping other children learn how to think, decide and build lives of possibility.

The most meaningful ideas often begin at home.

For the people who made every chapter possible.

Café Lola carries the name of Lin’s mother, Lola—a woman who worked two and sometimes three jobs so her daughter could dream without limits. She was the first to believe in every idea, no matter how ambitious, and the first to help bring it to life. That spirit of devotion, possibility and family continues to shape everything Lin creates.

01 / Vision

See the whole world.

An idea becomes memorable when every detail—design, story, service and feeling—belongs to the same point of view.

02 / Execution

Carry it through.

Beautiful ideas matter most when they are matched by discipline, clarity and the resolve to make them real.

03 / Evolution

Keep becoming.

The work can expand across industries and chapters while the values behind it remain unmistakably consistent.

The standard

“The work evolves.
The standard does not.”
